Coral Tooth Crispy Toppers

Coral Tooth fungi is a fascinating relative to the ever-popular Lion's Mane fungi. While the Lion's Mane resembles icicles or a waterfall, the Coral Tooth resembles, you've guessed it, coral! Its structure makes it perfect for frying into crispy pieces, as well as holding in lots of flavour and batter. These Crispy Toppers are delicious added on top of your favourite bowl of ramen, or rice dish. Why not try them as a snack with a dip too? You'll be surprised by how moreish they are.

 

Ingredients:

- 100g Coral Tooth fungi
- 1-2 tablespoons sesame seed oil
- 2 tablespoons rice flour
- 1 teaspoon cayenne pepper
- 1 teaspoon tikka masala spice mix (or other spice of choice)
- Salt and pepper to taste

 

Instructions:

1. Tear the Coral Tooth mushroom into 3cm long pieces (or whatever size you desire - adjust cooking time to suit) and place in a mixing bowl.

2. Drizzle the sesame oil onto the mushroom pieces and toss, making sure they are fully coated and adding more oil if necessary.

3. Dust the spices and salt and pepper on top then toss again until well coated.

4. Get a tablespoon of rice flour, dust over the mushroom pieces and toss again. Repeat with the second tablespoon of flour if more coverage is needed.

5. Air fry (or put in fan oven) at 160°C for 10 minutes. Ensure the mushroom is cooked all the way through before serving.

6. Place on top of a bowl of spicy ramen, miso rice, or any other dish of your choosing. Or eat as a snack with a dip! Enjoy!
