If you've read our blog about Turkey Tail (found here if not), then you may have heard about Fire Cider. Fire Cider is a fantastic remedy to have in stock over the winter months. Take a spoonful a day to ward off the Winter sniffles, and warm up the body. Our recipe has a fungi twist with the use of Turkey Tail too! Fire cider can be made with a variety of other ingredients such as horse radish, three-cornered leek, oregano, thyme, pine needles, rose hips etc. See what's in season in your shop, cupboard, garden, or local park!

Ingredients:
- Small handful of Turkey Tail (Trametes versicolor)
- 500ml bottle of apple cider vinegar
- 1 unwaxed lemon
- 1 onion
- 2 cloves of garlic
- 1 small chilli
- Small chunk of fresh ginger
- Small bunch of rosemary/marjoram/bay leaves/peppercorns
- Honey to taste
Instructions:
1. Sterilise a 500ml glass jar.
2. Chop the lemons, onion, garlic, and chilli.
3. Add them to the jar along with the herbs, and any other ingredients you would like.
4. Top up the jar with apple cider vinegar, until everything is covered.
5. Shake well, then place in the fridge.
6. Let brew for 4 to 6 weeks, shaking the jar every couple of days.
7. Strain the mixture and add honey to taste.
8. Store in a clean jar or bottle, and keep in the fridge.
