Mushroom Jerky
If you've ever come to one of our "Forage & Feast" events, or visited our stall at a festival market, you may be familiar with our tasty mushroom jerky. Many of you have marvelled at the flavour, and begged for the recipe. Well, here it is! Use this recipe with our dried mushroom packs to make your very own spicy mushroom jerky. It's perfect for a delicious-on-the-go snack, or powdered to make an amazing stock. Experiment with different flavours and spices to give it your own twist.

 

Ingredients:

- 25g Dried Oyster Mushrooms (buy here)
- 200ml apple cider vinegar or kombucha
- 2 tbsps dark soy sauce
- 3 tbsps honey
- 1 tsp smoked paprika powder
- 1 tsp cayenne pepper

 

Instructions:

1. Place all the ingredients, except for the mushrooms, in a tub and mix well.

2. Add the dried mushrooms.

3. Put the lid on the tub, and shake!

4. Refrigerate for 6-24 hours, shaking every couple of hours.

5. Dehydrate at 70°C for 2-4 hours, depending on the size of your dehydrator. Alternatively, dry in the oven on the lowest heat with the door partly open.

6. Store in an airtight container.
